&lt;p&gt;&lt;em&gt;Serves 2&lt;/em&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 Avocado&lt;/li&gt;
&lt;li&gt;1 Carrot&lt;/li&gt;
&lt;li&gt;1/4 cup Quinoa&lt;/li&gt;
&lt;li&gt;1 tsp Curry powder&lt;/li&gt;
&lt;li&gt;2 leaves Romaine &lt;/li&gt;
&lt;li&gt;2 Whole wheat tortillas&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Cook the quinoa according to directions on box, mix in curry powder. Chop the avocado and romaine, and shred the carrot. Split the ingredients between the 2 wraps. Fold and enjoy :)&lt;/p&gt;

I&amp;#8217;ve been MIA for a while but big news I&amp;#8217;m living in China now for the next 10 months. I&amp;#8217;m continuing my fitness journey on the other side of the world. &lt;/p&gt;

&lt;p&gt;For the most part my diet is healthy and I&amp;#8217;m not too concerned about that. We walk A LOT which is a nice change. I enjoy it for now but it will get cold pretty soon. Aside from walking I started my third week of P90X today. I&amp;#8217;ve missed it! &lt;/p&gt;

&lt;p&gt;I did P90X about 4 years ago and lost 20 pounds (without watching what I ate&amp;#8230;don&amp;#8217;t tell tony). While here in China I should be able to complete it 3 times.  Wish me luck! &lt;/p&gt;
